Smoked & Grilled BBQ Chicken & Ribs
This recipe is fairly simple but does require advanced preparation.
Make sure to thoroughly wash hands and all utensils and work areas with hot water and soap after handling raw chicken and pork! Keep chicken and ribs separate.

Ingredients
• 5 pounds raw chicken any style you like (breasts, thighs, wings, halves, bistro cut, etc)
• 4 - 5 pounds raw pork ribs
• 6 cups your favorite marinade (Italian dressing, Mojo, etc.)
• Poultry seasoning
• Rib or pork seasoning
• BBQ sauce

Pregame Prep:
1. Begin by pre-chilling your marinade.
2. Keep chicken and ribs separate. Rub the ribs on both sides with 2 cups of the chilled marinade. Toss 4 cups of marinade with the chicken.
3. Place meat & marinade in glass or “Tupperware” style containers. Keep chicken and ribs in separate containers. Cover and set in the refrigerator overnight.
4. Stir every few hours for even marination.

Using the Smoker
1. Pre-heat smoker according to manufacturers directions.
2. Drain excess marinade off of chicken and ribs and discard.
3. Generously season all sides of chicken and ribs with your seasonings.
4. Place in smoker and cook until internal temperature reaches 170-175°F for chicken and 195-200°F for ribs. Ribs will take longer to smoke than chicken.
5. Remove from smoker, set on a cooling rack and place in refrigerator until completely chilled.
6. Transfer into zip lock bags or other storage container with a tight lid and keep in refrigerator until ready to use.

Game Day Prep:
Using the grill

1. Pre-heat your grill and coat grill racks with vegetable oil. (Be careful of flame ups).
2. Place ribs on grill with the bone ends facing the heat and cook until bottom side of rib is hot and bones are bubbling.
3. Flip ribs over and cook until grill marks appear.
4. Place chicken on grill and cook until grill lines appear.
5. Turn chicken opposite direction to get “diamond” grill marks.
6. Flip chicken over and repeat last 2 steps.
7. Generously brush on your favorite BBQ sauce on the chicken and ribs and allow to cook for an additional minute or two so that the BBQ sauce thickens and caramelizes.
8. Serve immediately or hold on a cooler section of the grill to avoid drying out the chicken and ribs.

Extra Point Burgers
Dress up your burgers Hall Of Fame style:

Blue Cheese Burger
Melt Blue Cheese crumbles on burger then top with fresh cooked bacon.
Dress bun with Mayo, Lettuce & Tomato

Mushroom Burgers
Add sautéed mushrooms to burger then cover with cheese (Swiss, pepper jack, havarti, provolone) keep on the grill until cheese has melted.
Dress bun with Mayo, ketchup, lettuce, pickles and onions.

3 Cheese Onion Burgers
Add grilled onions to burger then melt sliced Cheddar, Velveeta and provolone cheeses.
Dress bun with Ketchup, mustard, lettuce and pickles.

BBQ Burger
Brush on your favorite BBQ sauce before melting cheese.

BBQ Chicken
Brush on your favorite BBQ sauce before melting cheese.
Dress bun with Onions, Lettuce & Tomato.

Grilled Onions
Ingredients

• 2 tablespoons butter
• 1 tablespoon Montreal seasoning
• 2 pounds onions

Pregame Prep
1. Clean onions and then slice into discs about ¼ - ½” thick.
2. Melt butter in microwave.
3. Lay out discs on a cookie sheet and then brush on butter and evenly sprinkle with seasoning. Turn onions over and repeat.

Game Day Prep
1. Place on hot BBQ grill and cook for 3 minutes, flip and cook for 2-3 more minutes.
2. Remove from grill and serve or hold warm.

Sautéed Mushrooms
Ingredients

• 2 tablespoons butter
• 1 tablespoon Lowry’s® Seasoning
• 1 pound sliced mushrooms (Fancy, Cremini, common, etc)

Pregame Prep
1. Gently wash mushrooms under cold running water and allow to air dry.
2. Slice mushrooms and set a side.

Game Day Prep
1. Melt butter in a large frying pan.
2. Add sliced mushrooms.
3. Sprinkle seasoning over mushrooms.
4. Cook for 1-2 minutes and then stir gently to evenly coat the mushrooms with the butter and seasoning.
5. Continue cooking and stirring until the mushrooms are al-dente.
6. Remove from heat and drain excess juice. Hold warm until ready to use for up to 4 hours.

Mama’s Baked Beans
This recipe is really easy to make and can be made a couple of days ahead of time. Have some fun with it and try adding some of your own ideas and see what you come up with.

Ingredients
• 2 pounds canned baked beans
• 1 tablespoon butter
• 1 pound smoked sausage
• 2 cups chopped raw bacon
• 1 cup diced onions
• 1 cup diced green peppers
• ½ cup KC Masterpiece BBQ sauce
• 1 ½ cups brown sugar

Pregame Prep:
1. Remove seeds from peppers and skins from onions. Wash under cold water.
2. Diced onions and peppers into ¼ - ½ inch pieces. Set aside.
3. Chop bacon into ½” pieces. Set aside.
4. Cut sausage into half moon pieces about a ½” thick. Set aside.
5. Over med high Heat melt butter in a large frying pan until hot.
6. Add chopped bacon and sausage to the hot butter and stir.
7. Cook for 2 minutes or until bacon is a little more then half way cooked and then add onions and peppers. Stir to evenly coat with liquid in frying pan.
8. Cook until the onions and peppers are soft on the outside. About 5 minutes.
9. Remove from heat and set aside.
10. Place baked beans into an oven safe casserole dish.
11. Pre-heat oven to 350°F.
12. Mix BBQ sauce and brown sugar with the beans.
13. Fold in the onion, pepper, bacon and sausage mixture.
14. Cover the dish and cook in the oven for 45 minutes.
15. Remove cover and allow to cool in the refrigerator uncovered, stirring every 20-30 minutes until completely chilled.
16. Replace cover and keep cold until ready to re-heat. (Up to three days)

Chopped Salad
Ingredients

• Iceburg and Romaine Lettuce
• Red Cabbage
• Julienne Carrots
• Sliced Red Onions
• Corn
• Chopped Bacon
• Diced Red Peppers
• Diced Tomatoes
• Jack Cheese
• Cooked, grilled and chilled chicken
• Your favorite dressing
• Potatoes sticks
• Chopped cilantro

Game Day Prep
1. Place lettuce mix in frozen serving bowl.
2. In a stainless steel mixing bowl add additional amount of lettuce mix, veggies, bacon, cheese and chicken and toss well with a pair of tongs.
3. Add dressing and toss to evenly coat.
4. Pile mixed salad from the mixing bowl high on top of lettuce waiting in the frozen salad bowl.
5. Pile potato sticks high in the center of the salad.
6. Sprinkle chopped cilantro over salad and serve immediately.

Lemonade
Ingredients

• 1 Cup of Squeezed and Strained Lemon Juice
• 1 Quart of Hot Water (Not Boiling)
• 1 Cup of Sugar

Game Day Prep
First, you must wash all the lemons. Then, cut the lemons in half and squeeze juice into a container. Strain juice to remove seeds and pulp. Add sugar and hot water to lemon juice. Stir until dissolved. Chill and Enjoy!
